Hi Nicole, I’ve tried making the Pumpkin Bread in Flourless several times, and it has the best flavor! But I have not had it successfully bake all the way through. I have used a (metric) scale and weighed all the ingredients, and I’ve calibrated my oven temperature. Is it possible that there is a typo in the measurements? Only 120 g of almonds versus the 170 g of pumpkin + 120 ml of syrup + 2 eggs results in a very thin batter.
Do you have a page of corrections to Flourless? I bought a copy to test recipes, hoping to give this to my daughter for Christmas. So far I’ve only made the chocolate chip cookies, and 2-1/2 cups of powdered sugar doesn’t weigh 150 grams.
Wow, Nicole — I just came across the cover. A truly beautiful book. I want to eat whatever it is that you call that chocolate-drenched layered creation.
