One head romaine lettuce, washed and dried, chopped
1/2 red onion, cut into slivers
1/4 cup pine nuts
1 carrot, cut into coarse chunks
1 cucumber, peeled and coarsely chopped
balsamic vinegar
olive oil
salt and pepper
In a large bowl, mix all ingredients together. Put a generous splash each of olive oil and vinegar onto the salad, and salt and pepper to taste. Toss the salad to dress. Serve immediately.
