1/2 pound spinach, washed and coarsely chopped
1 cup orzo
1/2 red onion, finely chopped
2 cups crumbled feta
fresh oregano
salt and pepper
Boil 3 cups of water with a pinch of salt. Add the orzo and cook until al dente. Drain and rinse with cold water. Set aside.
Meandwhile, steam the spinach in a frying pan with a dash of water until wilted. Remove from heat and place in a food processor or blender and puree until smooth.
Put the orzo in a large bowl and pour the spinach puree over it. Mix well to blend. Add the red onion and feta cheese and toss to combine. Season with the oregano and salt and pepper to taste. Serve at room temperature.
